Glacial ice plant

Mesembryanthemum crystallinum

The glacial ice plant is a succulent herb, also known as ice herb or frost plant due to its appearance. Its green leaves and stems are symmetrically covered with tiny crystal-like papillae, giving them a frosty look, as if frozen. The leaves range from two to ten centimeters long and have a high water content.

They have a citrusy flavor.

Typically eaten raw, they are used as a garnish for meat and fish dishes, and also as part of salads.

The leaves are featured in salads, meatballs, pickles, savory pie fillings, scrambled dishes, stews, soups, and more.

In Thai cuisine, it is even used in desserts.
